Easy Poke Bowl With Spicy Mayo

About a year ago my husband and I started going to this poke bowl place that is next to our house. I love sushi, so this is definitely something right up my alley. I wanted to recreate something like it to have at home wherever I wanted, so I came up with this Easy Poke Bowl with Spicy Mayo recipe. This is not the traditional poke bowl as a traditional poke bowl comes with raw tuna, I am using canned tuna for this, but I think it really works here.

The fun thing about this recipe is that you can take away, add or substitute any of these ingredients and I’ll tell you some of the variations that taste amazing.

Easy Poke Bowl Ingredients

Protein: Canned tuna. I use it because I always have it on hand in my pantry. It’s just one of the staple foods I have because I can always whip something up with it.
Substitute: Sushi grade tuna or salmon, shrimp, chicken, tofu. Any protein will taste amazing with this bowl.

Veggies: For this recipe I use cucumber, radish, carrots, red onion, pickled red onion, scallions and avocado. I definitely recommend avocado. On anything.
Substitutions: You can add or substitute any of these veggies. I like a good crunch in my poke bowls, so I like using a lot of crunch, fresh ingredients. You can add chickpeas or soybeans, bean sprouts, mushrooms, arugula. The possibilities are endless.

Grains: I like brown rice. I love the texture and the nuttiness that it has, so I use it in a lot of my meals.
Substitute: You can certainly use white rice. You can also skip grains all together and use a salad mix.

Herbs and spices: I added nori, or dried seaweed, that I found in the ethnic section of my grocery store. I love this stuff. It tastes good in some other salads as well. I also added sesame seeds. It wouldn’t be a poke bowl without sesame seeds. You can find those in the ethnic section as well.

Sauce: The sauce is quite simple, but very good. I used mayo, Sriracha and white vinegar.

If you have an Asian market in your area, I highly recommend checking it out if you haven’t yet. I love going to the Asian supermarkets and stock up on spices, they are much cheaper there and your get so much more than your regular grocery spice isle. I am lucky enough to live in an area where we have an Indian store and a couple of Asian markets and I am spoiled with the herb and spice selection.

Equipment

  • Can opener
  • Cutting board
  • Knife

Ingredients

  • 1/2 cup brown rice
  • 1 can tuna in water
  • 1 medium/large carrot
  • 1 avocado
  • 1 small Kirby cucumber regular long cucumber is fine also
  • 2 medium radish
  • ¼ medium red onion
  • 1 tsp sesame seeds
  • Pickled onions
  • Nori
  • Scallions

Sauce recipe

  • 4 tbsp mayo
  • 2 tbsp Sriracha
  • 1 ½ tbsp white or rice vinegar

Instructions

Building the poke bowl

  • Cook the rice according to instructions. If you haven’t cooked brown rice, it’s very similar to white rice. The same 1:2 ratio is used. The only thing to watch out for is that brown rice cooks a bit longer.
  • Cut all the veggies. I like to cut the veggies in rounds or sticks. This is an Asian dish and I like to cut the veggies how they serve them.
  • Mix the sauce ingredients together until smooth.
  • Open canned tuna and drain the liquid.
  • When the rice is cooked, divide the rice into two bowls. Divide canned tuna into two bowls. Add the veggies on top of rice. Add half the sauce mixture and top with sesame seeds and nori.
