The other day I was going through my pantry and realized I have so many baking ingredients, but I don’t do a lot of baking. I found unsweetened cocoa powder, and I don’t even remember buying it! I also found coconut flakes, chocolate chips, walnuts, condensed milk, evaporated milk and so many others. So, I figured I should put something together. Coming up with a recipe that uses chocolate, walnuts and coconut was easy peasy. This German Chocolate Cake brownie recipe came out so moist and gooey and just absolutely perfect. I think this is my favorite brownie I’ve ever had.
Why German Chocolate Cake?
I remember back in the day I used to buy German Chocolate cake ice cream from Cold Stone. It was my absolute favorite. It was so decadent and so delicious. Even though I’m typically not into extremely sweet deserts, I just loved it. I think it was the walnut/coconut mix. So when I found the ingredients in my pantry, my first thought was to make German Chocolate Cake brownies. My original plan was to make a layer of brownies on the bottom. Then a layer of the German Chocolate Cake frosting and finish with another layer of brownies on top. That idea didn’t quite pan out, but something just as amazing did! Next time, I will definitely try making brownies first and then the German Chocolate cake frosting on top.
German Chocolate Cake Brownies
Equipment
- 2 medium sized bowls
- 1 small or medium pan
- Whisk
- Spatula
- 8”x 8” baking pan (a 9”x 9” will also work)
Ingredients
German Chocolate Cake frosting
- 1 egg white
- 1/2 cup unsalted butter
- 1 cup coconut flakes (sweetened or unsweetend)
- 1 can evaporated milk
- 1 cup sugar (white or brown)
- 1 cup chopped walnuts
Brownies
- 2 eggs
- 1/2 cups vegetable oil
- 2 tbsp water
- 1/2 tsp vanilla extract
- 2/3 cups unsweetened cocoa powder
- 1 cup sugar (white or brown)
- 3/4 cups all-purpose flour
- 3/4 tsp salt
Instructions
German Chocolate Cake frosting
- Separate the egg white from egg yolk. Using a whisk slightly whip up the egg white until fluffy.
- Melt the butter in a pan over medium heat.
- Add the egg white, 1 cup sugar, 1 can evaporated milk and whisk over medium heat until the mixture starts to thickens.
- Turn off the heat and fold in the chopped walnuts and coconut flakes. Set the mixture aside.
Brownies
- Set oven to 325º.
- In a bowl, mix the cocoa powder, flour, salt, sugar. Set aside.
- In a separate bowl, mix 2 eggs, oil and vanilla until well combined.
- Stir the dry ingredients into wet ingredients and mix.
- Stir in the German Chocolate cake frosting.
- Pour in the batter into an 8” x 8” pan.
- Pop into the oven’s middle rack for 40-45 minutes.
So delicious!!!! I loved the outcome of this recipe.
