Open faced sandwiches is how I grew up. We never ever used 2 pieces of bread to make a sandwich, it was a new concept to me when I moved to America. Just add it to the many differences between Europe and the USA. I didn’t really eat a lot of sandwiches as a kid, but when I did this was the sort of sandwich my mom used to make. This Smoked Salmon and Pickled Onion Sandwich can be a delicious, light meal if you pair it with a soup or salad. It’s perfect for a lunch or a light dinner.
When I was growing up, our main meal was always lunch. My mom would try to stuff me with as much food as she could. I hated food when I was a kid. It wasn’t that I was a picky eater, I hated all food. I wish I still had that problem, sometimes!
This Smoked Salmon and Pickled Onion sandwich is super simple and is really good. You can add some variations to it depending on your preference!
Bread.
I recommend using a dark bread for this recipe, such as a rye or pumpernickel. For this recipe I used a walnut protein bread. I haven’t tried it before, but it was really good.
Substitution: Toasted white bread or wheat may also go well here.
Smoked Salmon.
You can choose any one you like. I typically like one that has dill on it. I didn’t see it in the store this time, but that’s what I usually buy.
Substitution: You should try this with sardines as well if you like smoked fish.
Butter.
I recommend using unsalted butter. The saltiness from the salmon is enough of that flavor.
Substitution: You can also use cream cheese.
Pickled Onions.
I definitely recommend using pickled onions, it gives this sandwich so much flavor and juiciness. It’s definitely a great addition to this already amazing snack. You can find my Red Pickled Onion recipe here.
Substitutions: If you don’t have any pickled onions or don’t want them on your sandwich, try using capers.
Toppings.
Fresh dill always goes well with salmon. It gives the smoked salmon a nice balanced flavor. You can also add fresh parsley, or cilantro for a stronger flavor
You can dress this sandwich up for a nice appetizer or just make it quickly as a small meal depending on what you pair it with. The sandwich has so many beautiful colors that it’s definitely a great contender for appetizers for your next gathering.
Smoked Salmon Sandwich with Pickled Onions
Ingredients
- 1 slice Walnut Protein Bread
- 1 tbsp Butter
- 3 pieces smoked salmon
- Pickled onion
- Fresh dill
- Avocado
- 1 cup arugula
Instructions
- Butter the bread
- Lay the salmon pieces on top of bread
- Top with fresh dill and pickled onions
- Lay the arugula on the plate.
- Put the sandwich on top or next to arugula
- Cut the avocado to serve as preferred
